This date night dinner recipe can be served as a side dish or you can easily turn this into a meal by adding grilled shrimp or chicken.

This salad has great color so your presentation looks beautiful.
INGREDIENTS
1 small jar (3.5 oz.) oil-packed sun-dried tomatoes
½ pkg. (4oz.) sliced fresh mushrooms
1 pkg. (5 oz.) sliced fresh shitake mushrooms
1 small red onion, sliced
1 tablespoon butter
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 pkg. (10 oz) spring mix salad greens
Crumbled cheese; goat, feta, or blue
Salt & Pepper to taste.
Drain tomatoes, save the oil. Julianne (cut into thin strips) tomatoes. In large skillet, heat butter and olive oil and sauté onions and mushrooms until caramelized, (brown). Stir in vinegar and tomatoes, cook on low heat for about 10 minutes. Arrange greens on platters, top with cooked mixture, sprinkle with cheese, drizzle with sun-dried tomato oil. Nice!
