This is great served over wild rice pilaf with the broth served over the top.

Servings: 3-4

2 Cornish Game Hens

1 Tablespoon Dijon Mustard

1 Tablespoon Butter

Salt & Pepper

Preheat oven to 425.

Halve birds lengthwise down the spine. Mix mustard and melted butter in a bowl. Place birds cut side down on a tinfoil lined baking sheet. Use a brush to cover birds with mustard-butter, salt and pepper to taste.

Bake for 30-35 minutes or until juices run clear.

Mushroom Sauce

˝ Cup Shitake Mushrooms, sliced

2 Shallots, chopped

2 Tablespoons Butter

2 Tablespoons Beef or Chicken Broth

In skillet over medium heat, sauté mushrooms and shallots in butter until tender and slightly caramelized. Add broth and heat through.
