Free Romantic Dinner RecipesChicken with Artichokes

Make this romance recipe easy and don't spend too much time in the kitchen- use boned, skinless chicken. Thighs work especially well and have a bit more flavor than the breats, not to mention less expensive.

INGREDIENTS
2 tsp + 1 Tbsp olive oil
2 oz. prosciutto, ct into strips (or smoked bacon)
1 1/2 lb. boneless, skinless, chicken
1 9 oz. pkg. frozen artichoke hearts, thawed
1 6 oz. pkg. sliced mushrooms (cremini are best for this)
2 cloves garlic, minced
1 Tbsp fresh tarragon or 1 tsp dry tarragon
2 Tbsp flour
1 14 oz can chicken broth
1 Tbsp balsamic vinegar
In large skillet cook prosciutto in 2 tsp oil, (no oil if you';re using bacon)until crisp - set aside. Sprinkle chicken with salt & pepper and cook in that same skillet until browned on both sides - set aside.
Add remaining oil and cook artichokes until golden, remove to bowl with chicken and cook mushrooms in that pan - cook about 3 minutes until golden. Stir in garlic and tarragon, cook about 1 minute.
Get another bowl out - whisk together flour, broth, and vinegar. Remove skillet from heat - add broth mixture. Bring the chicken and artichokes back in, bring to boil, reduce heat. Simmer until sauce is thick, top with prosciutto and tarragon.
Beautiful, aromatic, and really good.
