Romantic Chicken Dinner RecipeChicken Breasts w/ Dijon Sauce
This romantic chicken dinner recipe isn't hard to make and looks really nice on the plate.

Sauteed Chicken Breasts in a rich Dijon Mustard Sauce. It's the sauce that makes this "Date-Night" worthy! You'll have some yummy left-overs.
4 boneless chicken breast halves
salt & freshly ground pepper
2 Tablespoons Vegetable oil
2 shallots,peeled and sliced
1/4 Cup dry white wine
2 Tablespoons Dijon Mustard
1 Tablespoon fresh Tarragon, chopped
1 Cup light cream
Season the chicken both sides with salt and pepper, set aside.
Heat the oil in a large, heavy skillet over high heat, add chicken and cook until golden brown - about 7-10 minutes. Transfer chicken to a plate and cover with foil to keep warm.
Drain all but 1 Tbs fat from the skillet. Add shallots and saute until brown, about 2 minutes.
Add the wine and de-glaze the pan, (scrape up the good bits with a wooden spoon). Continue to cook until wine is reduces by half. Add the mustard, tarragon, and cream. Stir gently until well mixed.
Put the chicken breasts back into the skillet, bring to a simmer for 5 more minutes spooning sauce over the chicken while it cooks. Serve with sauce over the top and fresh trarragon for garnish.
Delicious with Arugula Salad and Parmigiano-Reggiano!
