Colorful Couscous

Romantic meals require easy, appealing side-dishes. This one fits the order!

This recipe for couscous salad makes a beautiful side-dish because it has red, green, and crunch!

prep: easy

Servings: 6

14 oz. chicken broth

1 ½ cups (12 oz.) couscous

1/3 cup good olive oil

1/3 cup fresh lemon juice

salt & pepper

1 medium red bell pepper – chopped fine

1 small red onion – chopped fine

½ cup nuts – sliced thin and toasted (I like almonds for this)

½ cup fresh cilantro – chopped fine

In a small pot bring chicken broth and about ¼ water to a boil. Add couscous, cover, remove from heat. Let it sit for 5 minutes then fluff with a fork. (how easy is that?)

In a large bowl whisk together olive oil and lemon juice. Add in couscous and stir to coat. S&P to taste.

Stir in the rest of the ingredients. You can garnish with cilantro or lemon slices if you want to fancy it up.

HERE IS A GREAT PLATING TIP: Spray a ramekin with cooking spray, pack the salad in tightly, then invert that cup onto a plate and it comes out like a perfect little sand-castle. Put a lemon-twist on top.

Serve at room temperature. If you don’t eat it all, cover tightly in the fridge.
