INGREDIENTS
4 tilapia fish filets (4-6 oz ea.)
1 tablespoon olive oil
4 lemon wedges
1 jar capers, drained and rinsed
1 tablespoon chopped parsley or basil
Salt & pepper to taste
½ cup lemon juice spiked with balsamic vinegar
Preheat oven to 400F, or this can be done on the grill. Rinse and pat filets dry with a paper towel. Lay filets on aluminum foil squares - enough to fold up and cover.
Drizzle with olive oil, season with the rest of the ingredients dividing the lemon juice among the packets.
Fold up and place packets on a cookie-sheet and bake for 15 minutes or grill for 10 minutes per side.
Serve with a salad and jasmine or brown rice for a super healthy meal!
